Darien ROSÉ
Varieties: 100% Tempranillo
Vinification: The stemmed grapes are transferred to the stainless steel vats as in the process for young red wines, but after a few hours maceration we remove part of the must with the right shade of pink and we ferment this virgin must at a constant temperature of 17ºC so that it will retain all its fresh aromas.
Once the alcoholic fermentation is complete, which takes about fifteen days, we cooled the wine down to 11º C in order to keep all the fruity aromas. Afterwards, the wine is gently fined and undergoes cold stabilisation before bottling.

Darien TEMPRANILLO
Varieties: 100% Tempranillo
Vinification: This wine reveals all the liveliness of the Tempranillo variety. The maximum expression of the fruit is transferred to the wine thanks to a long process starting with the alcoholic fermentation of the de-stemmed grapes. The previous and post-maceration to this fermentation allow a deeper extraction of the fruit aromas and flavours.
The bottling is made at the end of the winter season and the bottles are resting in our cellar until they are ready to be enjoyed. A wine with a longer shelf life than a standard unoaked wine.

Darien CRIANZA

Varieties: Tempranillo / Garnacha / Mazuelo / Graciano (depending on the harvest)
Vinification: The grapes are picked by hand and collected in small plastic crates of twenty kg. in order to avoid the bunch to be damaged. Vinification begins with the separation of the berries from the stalk, then maceration follows before the alcoholic fermentation begins. The different varieties of grape from which the wine is made are fermented separately. After the alcoholic fermentation is done, another long maceration process begins in order to extract all the aromas and flavour potential. Cask ageing is made in American- and French- oak casks for approximately twelve months to achieve the right balance of fruit and wood. In order to preserve he rich aromatic complexity of the wine, it is stabilised naturally.

Darien RESERVA

Varieties: Tempranillo / Garnacha / Mazuelo / Graciano (depending on the harvest)
Vinification: The vinification process is similar to the vinification of Darien Crianza, with the exception that after the malolactic fermentation, an exhaustive selection of the more structured wines is done. These structured wines are needed because it will allow the Reserva wine a higher period of ageing in bottle.
The cask ageing in French- and American-oak lasts a minimum of twelve months, up to reaching a balance between the fruit and wood, and a total integration of aromas and flavours.

Darien SELECTION

Varieties: Tempranillo / Garnacha / Mazuelo / Graciano (depending on the harvest)
Vinification: Darien Selection is made with the best of every harvest, therefore the number of available bottles is limited. The maceration is longer than in the previous wines and a stabilization of colour by microoxygenation precedes the malolactic fermentation.
This wine is aged exclusively in new French-oak casks and for the length of time that will be determined by the wine itself. The result surprises you with its aromas, structure and a excellent balance between fruit and wood.

DELIUS Special Reserve
Varieties: Tempranillo / Garnacha / Mazuelo / Graciano (depending on the harvest)
Vinification: It is only in those years in which the characteristics of the vintage allow us to obtain exceptional grapes that, in turn, allow to create a wine very superior to Darien Seleccion; only in those years we can enjoy a limited production of Delius Special Reserve.
The blend of the grape varieties, the winemaking process and the ageing periods can be extreme and unusual, in order to obtain an exclusive and atypical wine clearly separated from the Darien range.
